Maintains target margins in cost to sales and staffing costs to sales. Ensures high cleanliness and presentation standards are maintained throughout the premises. Ensures cellar standards are maintained at all times. Proposes new product and menu lines that will enhance the profitability and service standards. Introduces a departmental development plan with associated training. Manages the job standards for all employees. Accounts for cash control, ensures that all staff are properly trained in cash procedures, and monitors cash variances in relation to till reports.
